Academy Culinary Students Delve into their Cultures with a new Cooking Assignment
To explore their diversity through food, the students in Matt Kozak’s Culinary Arts class at Milliken Tech each made a soup that represented a part of their cultural background. Students sampled each dish, introduced the ingredients they used, and took turns discussing family traditions. This lesson engaged everyone in a rich dialogue about their identities.
One student made khao suey, a Burmese curried noodle soup, while another made kartoffelsuppe, a German potato soup. Other students made soups from Haiti, Italy, England, and Portugal.
“This assignment has my students learning on two levels,” explained Kozak. “They are familiarizing themselves with different cuisines and new ingredients, while also learning to appreciate other cultures. All these things will help them succeed in the world and in the workforce.”
The Eastern Long Island Academy of Applied Technology, referred to as the Academy, is the Career and Technical Education Program of Eastern Suffolk BOCES and has locations in Bellport, Oakdale, and Riverhead. Milliken Tech is located on the Oakdale campus.
